Blackberries contain a chemical class called anthocyanidins, they are what gives most berries a red, purple, or blue coloring. Anthocyanidins also happen to be pH sensitive, meaning they change color when in contact with acids or bases.
A substance that is more acidic will have a lower pH causing the berry juice to turn more reddish, while a substance that is basic will have a higher pH causing the berry juice to turn more blueish.
This is what happened with our experiment, the pH sensitive stuff in the blackberries reacted with the base, or baking soda with a high pH, and turned our writing into a darker, bluer hue.
